How it actually works
The inspection you pass on food temps can still ding you on paperwork: three new hires whose food handler cards nobody chased. Photograph each card once and it goes on a dated list; a warning email goes out a month before any of them lapses and again in the final two weeks, to whoever you name. New hire cards get added the day they start, by photo, in seconds.
